Pumpkin Pie Pancakes

All fall mornings should be filled with the smell of bacon and warm spices. Luckily I have this amazing recipe for Pumpkin Pie Pancakes that is just perfect for cuddling on the couch and watching Saturday morning cartoons. Best Morning EVER!!! Speaking of mornings.... lately while I get a bottle ready, Ty loves laying on his play mat and watching Disney Junior. Specifically Mickey Mouse Clubhouse and Miles from Tomorrow Land. As funny as it sounds for a 2 month old, he actually watches the TV. It must be the sounds and colors but it's so cute to watch his attention shift when either of those shows come on. It's so fun to have our family start to grow. Around this time of year it's especially fun to think of all the traditions we had growing up and the new traditions we can start for our small family. I'm thinking Autumn Pumpkin Pie Pancakes are going to be a permanent fall staple for this family. 






Pumpkin Pie Pancakes:


- 1/4 Cup Pure Pumpkin (not the pie mix 100% pumpkin)
-1 Cup Milk
- 1 Tbsp Sugar
-2 Tsp Baking Powder
-1 Tsp Cinnamon
-1/2 Tsp Pumpkin Pie Spice
-1/2 Tsp Ground Nutmeg

In a medium sized mixing bowl, combine the pumpkin puree and milk until smooth. Once smooth, add the remaining ingredients. Fry in a cast iron skillet and load up with your favorite maple syrup. Cuddle up and enjoy!
